Here are a few simple and healthy snacks every truck driver should pack during the next few months.

1. Pumpkin Pie Parfait

With just a few ingredients and minimal prep time, this pumpkin pie parfait is nutritious and delicious. All you need is ½ cup of plain greek yogurt, ½ cup of pumpkin puree, two tablespoons of honey, ½ teaspoon of pumpkin spice, a granola blend, and your favorite toppings. A few topping ideas include fresh cranberries, dried figs, shredded coconut, slivered almonds, honey, and cinnamon.

2. Cinnamon Apple Pie Smoothie

Skip the coffee and soda and try this mouthwatering cinnamon apple pie smoothie instead. All you need is one apple (peeled), one cup of almond milk, eight ounces of Greek yogurt, cinnamon, honey, vanilla extract, and nutmeg. Simply throw it all into the blender and enjoy! You could easily prepare this at home and enjoy it when you’re out on the road.

3. Zucchini Sticks

Simply cut the zucchini into strips, roll them in whisked eggs, flour, and a breadcrumb mixture before dropping them into an air fryer for 10 to 15 minutes. Get creative with sauces and dips to make this snack uniquely yours.

4. Pumpkin Hummus

There’s hardly a dish or drink out there that can’t be made with pumpkin flavors, and hummus is no exception. Create your own pumpkin hummus with chickpeas, pumpkin puree, olive oil, honey, roasted garlic clove, nutmeg, and salt.

Store bought granola bars often contain high amounts of sugar and unnecessary additives, preservatives, and syrups. Why not create your own granola bar at home? Choose as many or as few ingredients as you’d like and enjoy the snack while you’re out on the road.

Who can say no to a cheesy spinach spread with pita chips? Indulge your taste buds with this mouthwatering spread.

7. Spiced Nuts

Spiced nuts are a great snack, packed with healthy fats and bold flavors. For these homemade nuts, you’ll need one cup of pecan halves, one cup of unblanched almonds, one cup of unsalted dry-roasted peanuts, three tablespoons of butter, 4 ½ teaspoons of Worcestershire sauce, one teaspoon of chili powder, ½ teaspoon of garlic salt, and ¼ teaspoon of cayenne pepper.
